Super Rice Bowl
This is about as close as I get to a post on super bowl anything.
I love sushi, but I don't have it often. And when I do, I have a vegetarian option. What I really crave, aside from the silky beautifulness of high-quality raw fish, is rice and seaweed and ginger and soy. When I get a fix of that, I tend to not miss the fish anymore. And I try to not get all in-your-face political over here, but if people don't stop eating fish, we will not have any more. Period.
So. I recently was given a brand new rice cooker, which I was like wha? Whatever will I do with that? After a great discussion on my Facebook page about it, I gave it a go. And I like it. I mean, I didn't think rice could get any easier, but it did. And easier clean up too. I'll make a few cups of rice in the beginning of the week. I'll heat up a cup of rice for lunch, and add to that a half of a perfectly ripe avocado, seaweed, pickled ginger and a few shakes of soy sauce. You can put anything on it of course: some edamame, an egg, greens, pickles, vegetables chopped in matchsticks, sesame seeds.
The pickled ginger from The Ginger People is addicting, for the record. Steve asked me why I didn't make some of my own, and it's really because I love this stuff so much. I bought a case of it. And the seaweed is Yama Moto Yama seaweed snack chips. I snip them with my kitchen scissors right onto my rice.
I'm sure I'm being very basic here with the add-ons. If you have a great idea, let me know in the comments, would you? This way of eating has been a great way to avoid the lure of grilled cheese sandwiches, so I don't want to tire of it!

Winter Squash, Rice and Chicken Casserole
I don't really like squash, but I really want to like it. So, I buy it and try to cook it in ways that are, to me, delicious. It's something about the texture, I think, although my mother thinks that I had an issue with all foods orange as a child. I disagree, because I drank orange juice all day and night. I always volunteered to make the orange juice because not only was it a fun science project, but I could sneak spoonfuls of the orange, sticky, sickly sweet stuff while no one was looking. But, yes, sweet potatoes, squash were not friends of mine in their chunk form. I love them pureed, though, so that's what I do.
This was brilliantly easy, and I happened to have everything on hand, which is how I roll when it comes to cooking. I thought it would come out dull, but it was just delicious. And, of course, it's good for baby, too. You could very easily leave the chicken out for a vegetarian option.
2 cups of cubed, roasted winter squash, roughly pureed (I used butternut)
2 cups of cooked white rice (I'm sure brown would be just as nice; I happened to use Jasmine)
Shredded cooked chicken--1 or 2 cups?
1 cup plain, low-fat yogurt
1/2 tsp. nutmeg
Mix all together. Grease a lidded quart casserole and fill it with the mixture. Grate some nice sharp cheddar cheese (or whatever you have) on top. Cover with a thick layer of bread crumbs. Drizzle a little olive oil on top. Pop in preheated 350 oven. Bake for about thirty minutes, or until bubbling and looking good enough to eat.

Black Beans and Brown Rice
Tonight we had burritos with black beans and rice. It was delicious and lovely but I was too hungry and too busy feeding baby to take a picture. It would have been dull anyway. I soaked the beans last night and cooked them in the crock pot over the course of the day (two onions, two cloves of garlic, s&p, chili powder, bay leaf). Brown rice made during second nap, along with salsa fresca (tomatoes, lime juice, garlic, salt). We like flour tortillas even though it's sacrilege. I know I should find some nice corn tortillas...Top it with sharp cheddar, organic whole milk yogurt, extra cilantro, and you are in business. Simple and satisfying.
