Roasted Carrot, Celery and Acorn Squash Soup


This soup really hit the spot for the past few rainy, then chilly, spring days. I roasted two acorn squash, a big bunch of carrots, and celery. Yes, roasted celery is delicious! I especially like to add it to sweet vegetables like carrots and squash, because it balances it out with its green parsley-ish taste. I sauteed onions in olive oil and then added all the roasted vegetables, added water and simmered to make sure it was all nice and soft. I added a small amount of fennel seeds, instead of the usual nutmeg or ginger. Then I got out the trusty immersion blender and went to town on it. It was perfect topped with crème fraîche and fresh chives.

And in local rhubarb news, I've been obsessed with my rhubarb plants these days with good reason. They are huge and by far, the most exciting plant in the garden at the moment. But even still, they are such vigorous and beautiful plants, and not to mention I love me some rhubarb, that I love them all year round. My plants just started to flower, and they looked incredible and alien, but due to my greedy need for more pieplant I had to chop the flowers down to encourage more stalk growth. I can't shut my piehole!

  2. I don't think I have ever seen rhubarb flowers, they look a bit exciting! I'm with you on the rhubarb, pie or a crumble- it doesn't get much sweeter.

  3. Wow your rhubarb is flowering aleady?? I haven't even seen any at the farmer's market yet! (Of course, I keep hearing rumors, but since I'm not likely to get there by 8:30am - I never see any).

    That soup sounds divine; I was so missing my immersion blender down at Mom's for the week. How did I ever live without one?

  4. Kat - I cut them and put them in a vase for my kitchen. It's an alien beauty!

    chfg - I'd never seen them before either. They get big and tall and feathery.

    Kaela - I haven't seen any but my own yet! And getting my immersion blender many, many years ago was something that blew me away. When the first one died I was so at a loss, I couldn't believe it.

  5. I've never roasted celery before and I have a whole bunch if it outside in the garden so guess what I'll be trying today :)

    I've also never seen rhubarb flowers! I have a few plants too but they must not be as happy as I thought.

  6. Erin - I hear growing celery is a feat in itself. Awesome! Go roast some! I love it. And as for the rhubarb, some types just flower (mostly older variants) and some don't or don't as much. I got mine from someone's very old patch, so I think mine's an oldie. I do think it's happy, too!

  7. I wish I had rhubarb! The one I planted last year didn't come back. I guess I'll have to replant this year. When is a good time of year to plant rhubarb?

  8. Libby - You best bet is fall, so the roots can develop over the winter. But, I planted mine in the dead of summer and they are just fine!
