And, this has already come your way, but success, too! xoj

Meg - And a gin and cranberry tonic! My wishes as well, Meg!!

Kaela - Ha! I like that you hit on that. I have often thought of raising meat animals; I do often look at my nice plump chickens and wonder if I could do it. You do have to dispatch your own animals, just like hunting, so I don't see too much difference. Actually, hunting would help a lot of populations that have gotten out of control with the lack of predators (that we have taken out of commission). Deer for one.

JuliaH - All good advice, thanks for commenting! I totally agree on bigos being the best the day after. I have a large container waiting in the fridge for me. And my husband would agree, the more meat the merrier, I was just trying to keep it lighter...Juliahttps://www.blogger.com/profile/08337291320368324416noreply@blogger.comtag:blogger.com,1999:blog-1516199892122090215.post-45648050475003383452011-12-24T00:10:14.002-05:002011-12-24T00:10:14.002-05:00The best bigos is if you use the same amounts of s...The best bigos is if you use the same amounts of sauerkraut and fresh cabbage. Do not forget the bay leaf as well as wild dry mushrooms (previously soaked and cooked) and red wine. I would not put any potatoes in it as bigos is best, and it really is bigos, if you slow cook it for at least a day. Tastes the best the next day. And where I am from we eat it with bread. You can put any meat in it while it cooks,(sear first) but put the sausage just at the end.

Great Blog!JuliaHhttps://www.blogger.com/profile/11422051589886244940noreply@blogger.comtag:blogger.com,1999:blog-1516199892122090215.post-74592830536332647032011-12-23T11:36:50.451-05:002011-12-23T11:36:50.451-05:00I love that you gave some thought to eating roadki...I love that you gave some thought to eating roadkill. One more step down the road of Bad Ass Cookery. :)

Meat rabbits are fairly easy to raise, no? (after all, they mate like, ahem, rabbits). Maybe that's the intermediate step to the Road Kill Cafe?

Georgia's new book sounds lovely. On my list is to raise & butcher my own meat; becuase it just seems like, if I'm going to eat it, I should. But hunting; hmm. I suspect if it came down to that, I might be a vegetarian. Hypocritical of me, I suppose, but to me there is a big difference between purpose-bred and wild animals.kaelahttp://localkitchenblog.comnoreply@blogger.comtag:blogger.com,1999:blog-1516199892122090215.post-16317896917400097422011-12-22T19:42:11.185-05:002011-12-22T19:42:11.185-05:00I love what Georgia quoted above too!

One of my favorite lines: "Hunting seems to have gotten a bad rap over the past fifty years, and I wish industrialized meat had gotten it instead. Maybe we can work on that." I wish we were neighbors but at least we are internet neighbors ;) Have a wonderful holiday Julia! xoGeorgia Pellegrinihttp://www.georgiapellegrini.comnoreply@blogger.com
